Description

These Banana Cream Cookies are soft, tender, and full of creamy banana flavor. Made with instant vanilla pudding mix, ripe banana, and a hint of vanilla, these cookies melt in your mouth with every bite. Perfect for using up ripe bananas, they’re quick to make, no chilling required, and guaranteed to become a household favorite!

Ingredients

Scale
  • 1 box (3.4 oz) instant vanilla pudding mix (dry)
  • ½ cup (113g) unsalted butter, softened
  • 1 egg
  • ½ ripe banana, mashed (about ¼ cup)
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1¼ cups (160g) all-purpose flour
  • ½ cup (90g) white chocolate chips (optional)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Wet Ingredients: In a large bowl, cream softened butter until smooth. Add mashed banana, egg, and vanilla extract. Stir until well combined.
  3. Add Pudding Mix: Stir in the instant pudding mix (dry) until incorporated.
  4. Combine Dry Ingredients: Add flour and baking soda to the mixture. Stir until just combined—do not overmix.
  5. Fold In Add-ins: Gently fold in white chocolate chips if using.
  6. Scoop and Bake: Drop rounded tablespoons of dough onto prepared baking sheet, spacing about 2 inches apart. Bake for 9–11 minutes or until edges are set and centers remain soft.
  7. Cool and Serve: Let cookies cool on the pan for 5 minutes before transferring to a wire rack. Enjoy warm or at room temperature.

Notes

  • Use very ripe bananas for the best flavor and natural sweetness.
  • Don’t overbake — cookies will continue to firm as they cool.
  • Add a sprinkle of sea salt before baking for a sweet-salty balance.
  • Store with a slice of bread in the container to keep cookies soft.
  • Optional: Drizzle with melted white chocolate once cooled for extra flair.
