Description

Cauliflower Mac and Cheese is a lighter, healthier twist on the classic comfort food. By using cauliflower as the base, you get all the creamy, cheesy goodness of mac and cheese but with fewer carbs. It’s the perfect dish for anyone looking to enjoy a healthy, satisfying version of mac and cheese without sacrificing flavor. A great option for low-carb or keto diets, as well as families who want a veggie-packed meal without complaints.

Ingredients

Scale

Ingredients:

  • 1 large head of cauliflower (or about 4 cups of florets)
  • 2 cups shredded cheddar cheese (or more, for extra cheesiness)
  • 1 cup milk (or dairy-free milk of choice for a dairy-free version)
  • 2 tablespoons butter (or vegan butter for dairy-free)
  • 2 tablespoons all-purpose flour (or gluten-free flour for a gluten-free version)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground mustard powder
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs (optional, for a crunchy topping)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook the Cauliflower: Chop the cauliflower into small florets. Boil in salted water for 8-10 minutes until tender. Drain and set aside.
  2. Make the Cheese Sauce: In a saucepan, melt the butter. Add flour and whisk for 1-2 minutes. Slowly add the milk, whisking to avoid lumps. Once the mixture thickens, add garlic powder, mustard powder, salt, and pepper. Stir in the shredded cheddar cheese and whisk until smooth.
  3. Combine Cauliflower and Cheese Sauce: Add the cooked cauliflower to the cheese sauce. Stir gently to coat, mashing slightly for a creamier texture if desired.
  4. Bake (Optional): Transfer the mixture to a greased baking dish. If using, sprinkle breadcrumbs on top. Bake at 375°F (190°C) for 15-20 minutes, until the top is golden and bubbly.

Notes

  • Use Fresh Cauliflower: Fresh cauliflower is best, but frozen works as long as it’s drained thoroughly.
  • Make it Dairy-Free: Use dairy-free butter and plant-based milk to make this recipe vegan.
  • For Extra Flavor: Add a pinch of smoked paprika or chili powder to the cheese sauce for added depth.
