Instructions
- Preheat your oven to 350°F (175°C) and lightly grease your baking dish.
- In a large bowl, combine the sour cream, softened cream cheese, and dry onion soup mix until smooth.
- Add the sliced potatoes to the sauce mixture and stir gently until all potatoes are coated evenly. Season with salt and pepper.
- Transfer the coated potatoes into the prepared baking dish, spreading them out evenly.
- Sprinkle shredded cheddar cheese over the top.
- If using, mix the crushed crackers with melted butter and sprinkle over the cheese for a crunchy topping.
- Cover the dish loosely with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden, and the potatoes are tender when pierced with a fork.
